Is it possible to rename the cdrom output directory in post-build operation? I tried to do that but I think that it is not working because builder tries to edit/write to the original directory after post-build. Is there a later step than post-build in which it is possible to rename cdrom output dir?

You could do that using the below code (see below the snippet for a note):

<postBuildActionList>
 <actionGroup>
   <actionList>
      <renameFile origin="${installbuilder_install_root}/output/${project.cdromDirectory}"
          <destination>/some/other/dir/</destination>
      </renameFile>
   </actionList>
   <ruleList>
      <compareText text="${platform_name}" logic="equals" value="cdrom"/>
   </ruleList>
 </actionGroup>
</postBuildActionList>

However you will need a version of InstallBuilder not yet released (the fix is not included in 8.2.0). Could you write us to support@bitrock.com so we can create a build for you?
