The finish page shows "Setup has finished installing xxx on your computer". Can I customize that string? I tried to change project.fullName in postUninstallerCreationActionList, but that changes the title on that page too.

You can customize the built-in string. For this specific case the text is:

Installer.Installation.Finished.Text=Setup has finished installing %1$s on your computer.

This is described in more details in Changing Built-in Installer Text Strings section of InstallBuilder User Guide.

You can use variables - for example:

Installer.Installation.Finished.Text=Application was installed in ${installdir}

Then you can set the variables in the installer to customize it.
