For windows there is <windowsresourcefileversion>. What can I use for the mac version?

To change the version on OSX you can edit the plist using plutil with <runprogram> in the following way:

<runProgram>
<program>plutil</program>
<programArguments>-replace CFBundleVersion -string "my_version" /Path/to/Info.plist</programArguments>
</runProgram>
